Salty-Sweet Brown Butter Cornmeal Cookies

These cookies are one of my favorite things I’ve made recently. This is a combination of some of my favorite flavors/inspirations: brown butter, cornbread, salty potato chips, and sweet, chewy vanilla-flavored cookie dough. There’s just enough cornmeal in these for a little bit of texture and a subtle flavor, browned butter makes this feel nutty and decadent, and a salty surprise of crushed potato chips that brings everything together. I can’t possibly recommend these enough. A quick note: it’s important to use fine ground yellow corneal and not coarse ground yellow cornmeal for the right texture here.

Ingredients

  • 1/3 cup granulated sugar

  • 2/3 cup packed brown sugar

  • 1/4 teaspoon salt

  • 1/3 cup salted butter

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3/4 cup all-purpose flour

  • 1/2 cup finely ground cornmeal

  • 1/2 teaspoon baking soda

  • 3/4 cup crushed potato chips

Directions

  1. Preheat your oven to 350F, line a large baking sheet with parchment paper, and set aside.

  2. Add your butter to a small saucepan over medium heat and let it melt. Continue to cook, stirring occasionally, until you see brown specks at the bottom and the top is foamy. Voila, you have browned butter!

  3. Add the browned butter to a large mixing bowl along with the white and brown sugars, whisk until it resembles a paste.

  4. Add in your egg and vanilla extract and whisk again, the mixture should have loosened up quite a bit.

  5. Sift in the flour, cornmeal, and baking soda and gently fold them in with a spatula until no traces remain.

  6. Gently fold in the crushed potato chips. Chill the cookie dough for at least half an hour or overnight to help it firm up and let the flavors intensify.

  7. Divide the dough into 12 equal balls and place them 2 inches apart on your prepared baking sheet.

  8. Bake the cookies for 10-12 minutes, until they’re just set.

  9. When you remove the baking sheet from the oven, carefully drop it onto your stovetop or countertop from 8-10 inches above. Repeat this a couple times- this gives you those gorgeous grooves and chewy texture.
