Protein Pancakes
Don’t let the name scare you, there’s no protein powder or pea protein or whatever in these. These are your ordinary, run-of-the-mill, fluffy, delicious pancakes with one addition- protein-dense vanilla yogurt. I use Oikos Triple Zero or Oikos Pro but if you can’t find it in your grocery store, you can sub in a regular vanilla greek yogurt and still get a decent serving. I frequently double this recipe and freeze them in a ziploc bag for up to 6 weeks, then slide a couple in the toaster for a quick breakfast. This recipe makes 8 small-medium pancakes.
Ingredients
3/4 cup of protein-dense vanilla yogurt (I like Oikos Triple Zero)
2 large eggs
1/2 teaspoon vanilla extract
2 tablespoons granulated sugar
1/4 cup vegetable oil
1/4 cup whole milk (optional, for thinner batter)
1 cup all-purpose flour
1 teaspoon baking powder
3/4 cup mix-ins (chocolate chips, blueberries, etc.)
Directions
In a medium bowl, whisk together your eggs, yogurt, vanilla, sugar, and vegetable oil.
Sift in your dry ingredients and fold together until no streaks remain, then fold in any mix-ins.
Pour 1/2 a cup at a time into a nonstick skillet over medium-low heat. Flip once the edges are set and the middle begins to bubble, about 2 minutes. Cook for an additional minute on the other side.
